I’ve seen different numbers online about the size of a football field in acres. Does it include the end zones or just the playing field? Also, how many acres would a full field used in the NFL actually cover?

A typical NFL football field spans about 1.32 acres for the main playing area, not counting the end zones. When you include those end zones, the total area comes to around 1.87 acres. Keep in mind that this can vary a bit based on the surrounding space and the design of the stadium.
